  • 100g unsalted soft butter
  • 175g caster sugar
  • 1 large egg
  • 1 tsp vanilla essence
  • 250g plain flour
  • 75g desiccated coconut
  • 200g unsalted soft butter
  • 350g caster sugar
  • 2 large eggs
  • 2 tsp vanilla essence
  • 500g plain flour
  • 150g desiccated coconut
  • 300g unsalted soft butter
  • 525g caster sugar
  • 3 large eggs
  • 3 tsp vanilla essence
  • 750g plain flour
  • 225g desiccated coconut
  • Ingredients

    • 3.5oz unsalted soft butter
    • 6.2oz caster sugar
    • 1 large egg
    • 1 tsp vanilla essence
    • 8.8oz plain flour
    • 2.6oz desiccated coconut

  • 7oz unsalted soft butter
  • 12.3oz caster sugar
  • 2 large eggs
  • 2 tsp vanilla essence
  • 17.6oz plain flour
  • 5.3oz desiccated coconut
  • 10.5oz unsalted soft butter
  • 18.5oz caster sugar
  • 3 large eggs
  • 3 tsp vanilla essence
  • 26.4oz plain flour
  • 7.9oz desiccated coconut
  • Instructions

    1. Add all ingredients to a large mixer until formed a dough.
    2. Once the dough is formed, chill for 30 mins, don't skip this step as your dough will be too soft to roll out.
    3. Flour and sugar your work desk then roll the dough to a depth of 5mm.
    4. Cut out your biscuit with a cookie cutter, I used this one.
    5. Place on a baking tray lined with greaseproof paper and sprinkle extra sugar on top of your biscuits.
    6. Bake for 10 - 13 mins at 170°C ( keep your eye on these you don't want these to brown!)
    7. Take out of the oven and leave to cool down, they'll still be soft when fresh out of the oven
    8. Enjoy!
