Ingredients

Chicken Schnitzel

  • 3 large chicken breasts
  • 3 large eggs
  • Salt and pepper
  • 200g flour
  • Salt and pepper (for seasoning the flour)
  • 200g panko breadcrumbs
  • Salt and pepper (for seasoning the breadcrumbs)

Herby Dressing

  • 20g mint
  • 20g parsley
  • 20g rosemary, stalks removed
  • 4 garlic cloves
  • 2 tsp capers
  • ½ tin anchovy fillets
  • 50g white wine vinegar
  • Juice of ½ lemon
  • 3 egg yolks
  • 200ml olive oil

  1. Start by making the herby dressing. Add the mint, parsley and rosemary (with the stalks removed) to a food processor along with the garlic, capers and anchovy fillets.
  2. Add the white wine vinegar, the juice of half a lemon and the egg yolks to the food processor. Blend until everything is finely chopped and well combined.
  3. With the food processor running, slowly stream in the olive oil until the dressing emulsifies and becomes smooth and glossy. Taste and adjust seasoning if needed, then set aside.
  4. Slice the chicken breasts in half horizontally to create thinner cutlets.
  5. Using a rolling pin or meat mallet, gently bash the chicken until evenly thin. Be careful not to hit too hard as this can tear the meat. Season the chicken lightly with salt and pepper.
  6. Prepare your breading stations. Place the flour in one bowl and season with salt and pepper. Crack the eggs into a second bowl, season with salt and pepper, and whisk well. Add the panko breadcrumbs to a third bowl and season those with salt and pepper too.
  7. Coat each piece of chicken first in the flour, making sure it is fully covered, then dip into the egg mixture allowing any excess to drip off. Finally press the chicken into the panko breadcrumbs so it is evenly coated on all sides.
  8. Heat a generous amount of oil in a large frying pan over medium heat. Once the oil is hot, carefully add the breaded chicken.
  9. Fry the schnitzels for about 3 to 4 minutes on each side until golden brown and crispy, and the chicken is cooked through. Work in batches if needed so the pan does not become overcrowded.
  10. Transfer the cooked schnitzels to a plate lined with kitchen paper to absorb any excess oil.
