- 1-3 tbsp water
- 1 tsp vanilla essence
- 250g plain flour
- 6-10 tbsp strawberry jam
- 200g unsalted soft butter
- 200g caster sugar
- 150g icing sugar
- 2-6 tbsp water
- 2 tsp vanilla essence
- 500g plain flour
- 12-20 tbsp strawberry jam
- 300g unsalted soft butter
- 300g caster sugar
- 225g icing sugar
- 3-9 tbsp water
- 3 tsp vanilla essence
- 750g plain flour
- 18-30 tbsp strawberry jam
Ingredients
- 3.5 oz unsalted soft butter
- 3.5 oz caster sugar
- 2.65 oz icing sugar
- 1-3 tbsp water
- 1 tsp vanilla essence
- 8.8 oz plain flour
- 6-10 tbsp strawberry jam
- 7 oz unsalted soft butter
- 7 oz caster sugar
- 5.3 oz icing sugar
- 2-6 tbsp water
- 2 tsp vanilla essence

- Filling:
- 12-20 tbsp strawberry jam
- 10.5 oz unsalted soft butter

Instructions
- Mix butter and sugars until mildly creamed.
- Add the your flour and mix this with your hands or a wooden spoon, the mixture will be like breadcrumbs!
- Add a tablespoon of water and keep mixing until it forms a dough, do one at a time to not add too much liquid
- Once formed a dough roll it to a depth of 5mm and cut out your biscuit with a cookie cutter
- Freeze your cookies for 15 mins or until hard to touch
- Bake for 13 mins at 170°C ( keep your eye on these you don't want these to brown!)
- Once your biscuits have cooled, spread the jam on your biscuit and sandwich the top biscuit together.
