    • 250g plain flour

    • 150g icing sugar
    • 2-6 tbsp water
    • 2 tsp vanilla essence
    • 500g plain flour

    • 7 oz unsalted soft butter
    • 7 oz caster sugar
    • 5.3 oz icing sugar
    • 2-6 tbsp water

      • 12-20 tbsp strawberry jam
  • Dough:
    • 10.5 oz unsalted soft butter
    • 10.5 oz caster sugar
    • 7.9 oz icing sugar

    • 26.4 oz plain flour

  • Instructions

    1. Mix butter and sugars until mildly creamed.
    2. Add the your flour and mix this with your hands or a wooden spoon, the mixture will be like breadcrumbs!
    3. Add a tablespoon of water and keep mixing until it forms a dough, do one at a time to not add too much liquid
    4. Once formed a dough roll it to a depth of 5mm and cut out your biscuit with a cookie cutter
    5. Freeze your cookies for 15 mins or until hard to touch
    6. Bake for 13 mins at 170°C ( keep your eye on these you don't want these to brown!)
    7. Once your biscuits have cooled, spread the jam on your biscuit and sandwich the top biscuit together.
